Smoky Cascade Fish Tacos

Smoky Cascade Fish Tacos

Ingredients

  • 1 lb. cod or any white fish (fresh or thawed)

  • 1 Tbsp Abraham’s Fire in the Cascades

  • Avocado oil

  • Corn or flour tortillas

  • Optional toppings:

    • Crumbled queso fresco or cotija

    • Shredded cabbage (mix with our Robust Dust Dip for an amazing slaw)

    • Avocado slices

    • Lime wedges

    • Sour cream

Instructions:

  1. Prep the Fish:
    Pat the fish dry with paper towels to remove excess moisture.

  2. Season:
    Drizzle avocado oil over the fish and rub evenly. Sprinkle with 1 Tbsp of Fire in the Cascades , coating all sides.

  3. Grill:
    Heat a cast iron skillet or flat grill over medium-high heat.
    Place the fish on the hot surface and grill for about 3–4 minutes per side, or until the fish is cooked through and flakes easily with a fork.

  4. Warm the Tortillas:
    While the fish is cooking, warm tortillas in a dry skillet or over an open flame until pliable and slightly charred.

  5. Assemble Tacos:
    Break the cooked fish into large chunks and place in the warm tortillas.
    Top with crumbled queso fresco, shredded cabbage (or Robust Dust slaw), and avocado slices.

  6. Serve:
    Add lime wedges on the side for squeezing just before eating.
